Greyhound Collins

All you need to bring the zing to your next gathering:

Ingredients

• 30ml Ecology & Co Tini
• 20ml elderflower syrup
• 1 tbsp passionfruit pulp
• A few sprigs thyme
• 90ml grapefruit soda, chilled
• Soda water, chilled
• Ice cubes
  

Glass & Garnish

• Fresh thyme
• Serve in a highball glass over ice.

Method

• Fill a highball glass with ice.
• Add Ecology & Co Tini, elderflower syrup and passionfruit pulp.
• Add thyme and gently muddle.
• Pour over grapefruit soda, stir gently and top with soda water.
• Garnish with fresh thyme.

Pair with a delicious Zucchini & Ricotta Tart.
